Start out by cooking 1 cup of carrots; slice them and put them into a saucepan with a bit of water. Cover and boil, cooking for 6-8 minutes, or until they are tender.
You will need the following ingredients:
1 cup cooked carrots
1 can chickpeas (Hummus), rinsed and drained
1/4 cup tahina
2 Tbsp. fresh lemon juice
3 cloves garlic, quartered
1/2 teaspoon ground cumin
1/4 teaspoon salt
Place ingredients into your food processor and process until smooth..Then transfer to a serving bowl and stir in 2 tablespoons of chopped fresh parsley..If necessary, stir with water, 1 tablespoon at a time, to reach desired dipping consistency.
